PATTERNED PETIT FOUR HOW-TO

Instructions


STEP 1: CUT AND POUR PETIT FOURS

Cut the pound cake into 8 slices, 3/4" thick each. Lay slices down and use the 1 1/2" diameter round cutter to cut two petit fours from each slice.


Place the petit fours on tray fitted with the cooling rack and refrigerate for 15 minutes. Microwave 1 tub of icing in 15 second intervals, stirring in between, until it's a thin, pourable consistency and slightly warm to the touch. Working quickly, pour the petit fours with icing, covering completely.


STEP 2: CREATE STENCIL TOPS

Roll white fondant into a 14" x 8" rectangle and as thin as possible. Cut 4 circles from the edge of the fondant using the 1 1/2" round cutter and set aside. Next, lay the stencil in the uncut part of the fondant.


Next, tint the second tub of icing pink.


Hold the template steady while spreading the pink icing in a layer across. (Do not let the template shift during this process).


Carefully remove the template and let the pattern dry for 5 minutes. 


Next, brush a little water on 4 of the petit fours and top with the white circle of fondant.


Next, use the 1 1/2"cutter to cut circles out of the patterned section of the fondant. Brush the remaining petit fours with a light coating of water and place the patterned circles on top.


STEP 3: ADD LETTERS TO CREATE MESSAGE

Tint some of the excess white food coloring pink with the pink paste. Roll the fondant as thin as possible and cut out letters to create a message.


Adhere the letters to the top of the white petit fours with a little water.
