TUXEDO CAKE POPS

(makes roughly 50 cake pops)
For the Chocolate Cake:
11⁄2 cups all-purpose flour
1⁄3 cup unsweetened cocoa powder
1 teaspoon baking powder 1⁄2 teaspoon baking soda
1⁄4 teaspoon salt
1 cup buttermilk
1 teaspoon pure vanilla extract 1 stick unsalted butter, softened
1 cup sugar
2 eggs
To make the cake, preheat the cake to 350 and spray a 9×13 glass baking dish with nonstick spray; set aside.  Whisk the flour, cocoa powder, baking powder, baking soda, and salt together in a bowl; set aside.  In a measuring cup, mix together the buttermilk and vanilla extract; set aside.  In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugar together on medium-high speed until pale and fluffy.  Add eggs, one at a time, beating well between each addition.  Reduce mixer speed to low and add half of the dry ingredients, followed by the buttermilk and vanilla.  Scrape down the sides of the bowl; then add the remaining dry ingredients, beating until well incorporated.  Pour batter into prepared pan and bake 30–35 minutes, or until a toothpick inserted in the center comes out clean.  Remove from oven and let cool.
For the Chocolate Frosting:
6 tablespoons unsalted butter, softened
1 cup confectioner’s sugar
1⁄3 cup unsweetened cocoa powder
3 tablespoons whole milk
To make the frosting, mix the butter, confectioner’s sugar, and cocoa powder in a bowl;  add the milk one tablespoon at a time until the frosting reaches a smooth, creamy consistency.  Note: You can use store-bought chocolate frosting instead of making frosting from scratch.
Cake Pop Assembly:
16 ounces white candy melts
8 ounces chopped dark chocolate
50 6-inch lollipop sticks
  1. Break the cake into a large bowl.  Using your fingers, crumble up the cake until no large chunks remain.
  2. Stir the chocolate frosting into the bowl of cake crumbs, 1 or 2 tablespoons at a time, until the consistency is thick and the mixture can be rolled into balls easily.  If it is too dry or too moist, you will not be able to roll the mixture into balls, which is why it’s important to add the frosting slowly.
  3. Form the cake mixture into 1 1⁄2–2 inch balls with your hands.  I often weigh the cake balls so they are uniform in size; they should weigh 0.6 to 0.7 ounces.  Place balls onto baking sheets.  Chill in the refrigerator for about an hour.
  4. Put the white candy melts in a microwave-safe bowl.  Melt in the microwave in 30-second intervals, stirring vigorously with a spoon between intervals.  It should take two or three 30-second intervals for the candy melts to melt completely.
  5. Remove the cake balls from the refrigerator.  Working one at a time, dip the tip of the lollipop stick in the melted white candy melts; then insert it into the cake ball until it’s about halfway through.  Holding the stick, dip the cake ball into the white melted candy, rotating to coat evenly.  Tap the lollipop stick gently against the side of the bowl to remove any excess candy melt, then place cake pop onto parchment paper to dry, so the lollipop stick is upright.  Repeat until all cake pops are complete.
  6. Melt the chopped dark chocolate in the microwave.  Dip just the bottom of each cake pop in the melted dark chocolate, holding the pop in a diagonal direction and dipping it into the coating until half covered.  Remove and dip the other side in the opposite diagonal direction to form black V-shaped jacket.  Place the pop, ball side down, back onto waxed paper.
  7. Use a toothpick to dot three small chocolate buttons into the V to create the effect of buttons on the tuxedo shirt. Finally, cut pieces of chocolate into triangles to use as bow tie.  Adhere to cake pop with a small amount of melted chocolate. Makes about 50 cake pops.

DIY: CUPCAKE LINER WITCH HATS

Cupcake Liners
Mini Cupcake Liners
Double Sided Tape
Toothpicks
Scissors

STEP 1:  Grab a regular sized cupcake liner.  Fold liner in half.  Fold in half again, creating a pie-like wedge.  Tape the two flaps together using double sided tape, so that you have one solid triangle.
STEP 2:  Fold in half again.  Tape again.  Now you should have a tall skinny wedge that is 1/8 the size of your original circle.  If your liner is now a flat triangle due to folding, fluff it up with your finger so that it makes a cone.
STEP 3:  Insert a toothpick into your cupcake and place your cone on top of the toothpick.  This is the body of your hat.  The toothpick will help your hat stay in place.
STEP 4:  Grab a mini cupcake liner.  Cut a hole in the middle of the liner.  I found it easiest to do this by folding it in half and then cutting out a ‘C’ shape on the folded edge.  Open up liner and slightly flatten with your hand.  This will be the brim.
STEP 5:  Slide the brim down over your cone to complete the hat.  Smush and crinkle to add character.  Bend the tip of the hat, if desired.

DIY LOVE BUG CUPCAKES

Supplies
cupcakes, baked without wrappers or wrappers removed
buttercream icing
red fondant
heart-shapped cutters, big and small
lollipop sticks
candy eyes

STEP 1 :  Roll out red fondant and cut out hearts using the large heart cutter.
STEP 2 :  Repeat until you have one large heart for each of your cupcakes.
STEP 3 :  Roll out more red fondant and cut out hearts using the small heart cutter. Repeat until you have four small hearts for each of your cupcakes.
STEP 4 :  Place one small heart, pretty side down onto parchment paper.  Place lollipop stick onto heart.  Place second heart on top and press down to seal the two hearts together, lollipop stick inside.  If fondant is too dry to seal together, lightly wet the inside with a light dab of water.
STEP 5 :  Repeat until you have used up all of your small hearts.  You should now have two of these sticks for each of your cupcakes.  These are the antenna ears.
STEP 6 :  Place one large heart, pretty side up onto parchment paper.  Put a dab of icing onto the pointy end.  Place cupcake on top, positioning over the pointy end.
STEP 7 :  Fill a pastry bag with buttercream icing and attach pastry tip #233 (aka, the Grass Tip because you use it to make grass-like decorations).  Put the tip up against the cupcake and gently squeeze the bag while pulling straight out and away.  Release pressure to finish the strands.  Continue making short ‘hairs’ by moving just to the right of your first clump of hair and repeating the same motion to squeeze on more icing.  Pipe a complete circle of icing all the way around the base of the cupcake.
NOTE :  You may find it easier to gently hold the cupcake in one hand while piping with the other.
STEP 8 :  Continue piping to cover the entire cupcake with icing.  Circle up the cupcake, row after row.
STEP 9 :  You’re almost there!  Just a few more squeezes and your Love Bug will be completely covered in yummy icing.
STEP 10 :  Insert two ears into top of cupcake.
STEP 11 :  Gently push two candy eyes into place on the face area.  And now your Love Bug is complete!

Marshmallowbrownies med chokladkrisp

Marshmallowbrownies med chokladkrisp, en ljuvlig kaka för alla som gillar sött.
20–25 bitar
200 g mörk choklad
100 g smör
3 ½ dl strösocker
4 ägg
1 ¾ dl vetemjöl
2 tsk vaniljsocker
½ tsk salt
1 påse minimarshmallows, ca 280 g
Chokladkrisp
200 g mörk choklad eller mjölkchoklad
100 g smör
7–8 dl Rice krispies


GÖR SÅ HÄR
1. Sätt ugnen på 175 grader.
2. Smält chokladen över vattenbad. Lägg i smöret och låt det också smälta. Häll blandningen i en bunke och tillsätt sockret.
3. Låt blandningen svalna lite och tillsätt äggen, ett i taget. Blanda ner vetemjöl, vaniljsocker och salt. Rör ihop med en slickepott. Bred ut smeten i en form, ca 20 x 30 cm, klädd med bakplåtspapper.
4. Grädda kakan mitt i ugnen i ca 25 min.
5. Ta ut kakan och sprid ut en påse minimarshmallows över den. Grädda kakan i ytterligare 5 min. Låt kakan svalna på ett galler.
6. Chokladkrisp: Smält chokladen och smöret över ett vattenbad. Blanda i Rice krispies och rör om. Bred blandningen jämnt över den kalla kakan.
7. Låt kakan stå övertäckt i kylskåpet i några timmar. Det är lättare att skära snygga bitar om kakan är kylskåpskall.

Kladdkaka

Godaste kladdkakan – Hembakats klassiska kladdkaka, uppiffad med en härligt täcke av mörk choklad på toppen. Vår läckra kladdkaka går bra att smaksätta, se faktarutan till höger.
Ca 12 bitar 
150 g smör3 dl strösocker3 ägg4 msk kakao1 ½ dl vetemjöl1 nypa salt2 tsk vaniljsocker
Till formensmörkokos
Garnering75 g mörk choklad, smältflorsocker
GÖR SÅ HÄR1. Sätt ugnen på 180 grader.
2. Smörj en form med löstagbar kant, 22–23 cm i diameter, med smör och bröa den med kokos.
3. Smält smöret i en kastrull. Tillsätt resten av ingredienserna och blanda snabbt ihop allt till en slät smet.
4. Häll smeten i formen.
5. Grädda kladdkakan mitt i ugnen i ca 20 min. Anpassa gräddningstiden efter hur kladdig du vill ha kakan.
6. Låt kladdkakan kallna i formen. Bred där­efter ut smält choklad på kakan och låt den stelna.
Pudra över lite florsocker.

Lindas fröknäcke

Det är inte svårt att baka ett läckert knäckebröd. Var bara noga med att kavla degen riktigt tunn innan gräddning. Det här är ett otroligt lättbakat och gott knäckebröd som även barnen gillar.
1 plåt
¾ dl mandelmjöl
¾ dl solrosfrön¾dl sesamfrön¾ dl pumpafrön¾ dl linfrön1 msk fiberhusk½ tsk salt½ dl rapsolja2 dl vatten, kokande
Garneringflingsalt
GÖR SÅ HÄR
1. Sätt ugnen på 160 grader.
2. Blanda alla de torra ingredienserna i en bunke. Rör om ordentligt.
3. Tillsätt olja och det kokheta vattnet. Rör om ordentligt tills smeten blir geléaktig.
4. Kavla ut degen mellan två bakplåtspapper på en plåt, till en tunn kaka som täcker hela papperet. Ta bort det övre papperet och strö lite flingsalt över degen.
5. Grädda brödet mitt i ugnen i 60–75 min. Låt brödet svalna och bryt det sedan i bitar.


Knådfritt grytbröd

Gjutjärnsgrytan ger ett saftigt bröd med frasig yta. Tyngden på locket gör att fuktigheten bevaras i brödet. Degen är enkel att göra men ska jäsa i två längre omgångar. Grädda brödet i en 3–4 liters gryta.
1 bröd
6 dl vatten, rumsvarmt1 dl filmjölk¼ pkt jäst2 tsk salt13–15 dl vetemjöl
GÖR SÅ HÄR
1. Häll vatten och filmjölk i en bunke. Lös upp jästen i vätskan och tillsätt salt.
2. Rör ner ca 8 dl vetemjöl till en tjock smet.
3. Täck smeten med plast-folie och låt den jäsa i 4–8 tim i rumstemperatur.
4. Tillsätt ytterligare 5 dl vetemjöl och låt degen jäsa under bakduk i ytterligare 2–8 tim. Smaken och glutentrådarna utvecklas ju längre degen får jäsa.
5. Nu ska degen vara elastisk med långa glutentrådar. Tillsätt eventuellt 1–2 dl vetemjöl om degen är mycket lös. Hur mycket mjöl som behöver tillsättas beror bland annat på hur varmt degen stått. Jästsvamparna äter vetemjölet och ju varmare degen stått, desto mer mjöl behöver tillsättas. Konsistensen ska vara lös men degen ska ändå hålla ihop.
6. Rulla degen i en rikligt mjölad handduk och låt den jäsa inrullad i handduken i 30 min. Sätt ugnen på 250 grader. Sätt samtidigt in en tom gjutjärnsgryta i den varma ugnen.
7. Strö lite mjöl i grytans botten och lägg den mjölade degen i den heta grytan och sätt på locket. Utan mjöl fastnar brödet.
8. Grädda brödet längst ner i ugnen i 15–20 min. Ta därefter av locket och sänk temperaturen till 225 grader. Grädda brödet i ytterligare 15–20 min.
